Whole wheat berries are an incredibly nutritious food, but need to be properly prepared to unlock their nutrition and make them easier to digest (see PART 1 for more information on this). Milling them fresh and making them into sourdough bread is the way to go if you love a hearty and flavorful homemade bread. You probably noticed that I don’t measure my ingredients. I used approximately 1 cup of active starter, 12 oz water, 1 tablespoon Redmond salt, and 2.5-3 cups of freshly milled flour (mill
